How to Create a Weekend Warrior RV Camping Meal Plan [Recipes Included]
We enjoy taking extended RV Camping trips as often as we can, however, sometimes we only have a weekend to get away. Spending time cooking and grilling the entire time is not something we wish to do with our limited time. That’s why we really wanted a quick and easy weekend plan to get out and have as much fun as we can. However, we still must make sure we eat! Therefore, we came up with our Weekend Warrior RV Camping Meal Plan!
The Weekend Warrior
If you’re an RV Weekend Warrior (someone who goes RV Camping on the weekends mostly) you know most campgrounds allow you to check in sometime Friday afternoon, usually around 2 PM. Most likely then, you must be out on Sunday usually by 2 PM as well. That is the time frame we will use for this Weekend Warrior RV Camping Meal Plan.
Weekend Warrior RV Camping Meal Plan for Friday
Dinner: Hamburgers on the Grill
It doesn’t get much easier than throwing some burgers on the grill once you get to the campground and get setup. That’s exactly what we do on Friday evening. Super simple. Get some potato salad from the grocery store and it’s all good. Perfect for a traditional camping quick meal.
Ingredients to bring along:
- Hamburger Patties
- Hamburger Buns
- Head of Lettuce (for burgers and another meal later)
- Tomatoes (for burgers and another meal later)
- Pre-made side/salad from the grocery store
- Burger Condiments you prefer
Weekend Warrior RV Camping Meal Plan for Saturday
Breakfast: Easiest Biscuits and Gravy EVER
We like to sleep in on Saturday mornings. Well, the husband does anyway! A totally easy, no work, no messy breakfast is exactly what we wanted. We found that using refrigerated biscuits and canned country gravy. Super simple and done!
Ingredients to bring along:
- Refrigerator Biscuits
- Canned Country Gravy
Lunch: Even MORE Simple BLT’s
We want to make lunch very fast and easy on Saturday so we can get on with our fun activities! We decided to bring along our LeKue Microwave Bacon Cooker, a head of lettuce, tomatoes (perfect to cut up early and use on the burgers on Friday night by the way) and have our simplest lunch of BLTs EVER!
Ingredients to bring along:
- LeKue Bacon Cooker
- Bacon
- Lettuce (included above)
- Tomatoes (included above)
- Bread
Dinner: Make-Ahead Lasagna
I LOVE the idea of making something yummy ahead of time and having it ready to for when we are camping. This simple make-ahead Lasagna is PERFECT for a great meal on Saturday evening! All we must do is throw it in the oven for 30 minutes and we have a HOME COOKED meal right there at the campground!
Here is Mom’s Lasagna Recipe that we have eaten for years!
- Prego Sauce with Mushrooms
- Lasagna Noodles
- Small Curd Cottage Cheese
- Shredded Mozzarella Cheese
- 3-4lbs. Ground Beef
- Boil Lasagna Noodles. Drain.
- Brown Ground Beef. Drain.
- Mix the cottage cheese and mozzarella cheese together in a separate bowl.
- Layer Lasagna Noodles, Cooked Ground Beef, Cheese Mixture, and then Prego Sauce. Repeat the layer again. Top with leftover mozzarella cheese if desired.
- *Skip the next step until you get to the campground and are ready to cook it! Simply refrigerate it or freeze it at this point. *
- Bake at 350 degrees for 30 Minutes.
Weekend Warrior RV Camping Meal Plan for Sunday
Breakfast: Super Simple Breakfast Burritos
Breakfast on Sunday morning is very easy as well. First, we use our nifty LeKue Deep Steam Case to cook the red peppers in the MICROWAVE. Next, we brown the breakfast sausage in a skillet. Third, warm up the tortillas in the microwave and finally, load them up with the sausage, red peppers, salsa, sour cream, and cheese and you have a super simple breakfast burrito in a few minutes!
Ingredients to bring along:
- LeKue Deep Steam Case
- Red Peppers (2)
- Breakfast Sausage Roll
- Tortilla Shells
- Shredded Cheese
- Salsa
- Sour Cream
Lunch/Dinner Combo: Goulash
We love Goulash. It’s another family favorite. This recipe is super simple and feeds a LARGE amount of people so be sure to cut all ingredients in half unless you plan to freeze a bunch of it once you get home. Hey! Better yet, make the large amount, freeze the rest, and take it to use with your next Weekend Warrior RV Camping Meal Plan!
Here is Mom and My Shared Favorite Recipe for Goulash!
- Ground Beef
- 4 cans of Peeled and Diced Tomatoes
- 1 Large Bag of Macaroni Noodles
- 3/4 Container of V-8 Original Juice
- Salt/Pepper to taste
- Brown Ground Beef. Drain.
- Boil Noodles. Drain.
- Add cooked ground beef, canned tomatoes, V-8 Juice, and Noodles to a LARGE pot.
- Simmer for 20-30 minutes.
Note, because we must be out of the campground by 2 PM, we don’t usually eat dinner on Sunday. That’s why we plan a larger lunch/dinner combo meal on Sunday.
