Our Favorite Meal While RV Camping
OK, so we are going to make this short and sweet! Our Favorite Meal While RV Camping is Smoked Pork, Smoked Barbecued Baked Beans, Simple Coleslaw, and a crisp dill pickle. Finish it off with a bowl of Simple Peach Crunch and I am in a food coma for a long, long time while RV Camping!
So, what’s the secret? Well, it’s not a secret at all and I am about to share this awesomeness with you RIGHT NOW!
Smoked Pork
Uncle Bills Recipe for the Pork
3/4 Cup Apple Juice
1/4 Cup Salt
Water
2 Tablespoons Worcestershire Sauce
1/2 Cup Sugar
Mix all above ingredients well and pour into a Flavor Injector!
Inject the rub BEFORE you take it out of original packaging!
Then, refrigerate it for 8-24 hours.
BEFORE starting to smoke it in the smoker, rub off all of the meat with a paper towel so it’s drier. Then apply your favorite flavored Dry Rub.
Smoke the meat at 225° until internal meat temperature gets to 160°.
At this point, wrap the meat in thin foil.
Raise the smokers temperature to 350° until the meat internal temperature gets to 195°. (This is a good time to add the BBQ Beans to smoker too).
Take off smoker and let cool.
Smoked Barbecue Baked Beans
2 28 oz. Cans of Van Camp’s Pork and Beans
1 lb. Bacon (cooked and cut into 1″ bites)
1/2 Cup Brown Sugar
1 Cup of Your Favorite Barbecue Sauce
1/2 Cup Ketchup
1/4 Cup Yellow Mustard
Onion Flakes (I don’t care for onions too much so just use flakes)
Gamma Pam says you can cook these in the Crockpot (WooHoo!, more Crockpot Cheating While RV Camping Recipes) or you can put them in the smoker right alongside the Pork (see above when to do this). Simply combined all ingredients, mix well, and smoke them in your smoker at 350 degrees for 30 minutes.
Super Simple Coleslaw
Shredded Coleslaw Mix
1/2 Cup Hellman’s Mayonnaise
2 Tablespoons Sugar
1 1/2 Tablespoons of Lemon Juice
1 Tablespoon Apple Cider Vinegar
1/2 Teaspoon Salt
1/4 Teaspoon Pepper
Simply mix all the ingredients above and refrigerate until ready to serve!
Super Simple Peach Crunch
2-21 oz. Can of Peach Pie Filling & Topping
1-Box Ultra Moist White Cake Mix
1-Stick Butter (melted)
First, pour the 2 cans of pie filling into a 9 X 13 pan. Next, pour the entire cake mix (dry) on top of pie filling and spread it out. Now pour the melted butter all over cake mix but do not mix. Finally, bake for 25-28 minutes at 325 degrees or according to cake mix temperature. Refrigerate for storing.
